A luscious Maltese tart with a buttery pastry shell filled with a rich almond macaroon mixture, baked until golden and fragrant.

Ingredients

  • For pastry: 250g flour, 125g butter, 50g sugar, 1 egg, pinch salt
  • For filling: 300g ground almonds, 200g sugar, 4 egg whites, zest of 1 lemon, 1 tsp almond extract
  • Powdered sugar for dusting

Instructions

  1. 1 Make pastry: rub butter into flour, add sugar, salt, and egg. Form dough, chill 20 min.
  2. 2 Roll pastry and line a greased tart pan. Prick base with a fork.
  3. 3 Whisk egg whites until frothy. Fold in ground almonds, sugar, lemon zest, and almond extract.
  4. 4 Pour filling into the pastry shell, spreading evenly.
  5. 5 Bake at 170°C (340°F) for 35-40 min until golden and set.
  6. 6 Cool completely. Dust with powdered sugar before serving.
