A comforting Maltese oven-baked rice dish enriched with eggs, minced beef, tomato sauce, and a golden cheese crust.

Ingredients

  • 400g long-grain rice
  • 300g ground beef
  • 1 onion, diced
  • 400g tomato passata
  • 3 eggs, beaten
  • 80g grated Parmesan
  • 500ml beef broth
  • 2 tbsp olive oil
  • Salt, pepper, dried parsley

Instructions

  1. 1 Cook rice in broth until just tender. Drain any excess liquid.
  2. 2 Sauté onion in olive oil, add ground beef, cook until browned. Add passata, simmer 10 min.
  3. 3 Combine rice, meat sauce, beaten eggs, and half the Parmesan. Season well.
  4. 4 Pour into a greased baking dish. Top with remaining Parmesan.
  5. 5 Bake at 180°C (350°F) for 35-40 min until set and golden on top.
  6. 6 Let stand 10 min before cutting into squares to serve.
