A dense, sweet Maltese confection made from tahini, sugar, and almonds, often flavored with vanilla and studded with candied fruit.

Ingredients

  • 250g tahini (sesame paste)
  • 300g sugar
  • 150ml water
  • 100g blanched almonds, roughly chopped
  • 50g candied cherries or mixed peel
  • 1 tsp vanilla extract
  • Pinch of cocoa powder (optional)

Instructions

  1. 1 Line a loaf tin with parchment paper.
  2. 2 Heat sugar and water in a heavy saucepan, stirring until dissolved. Boil to soft-ball stage (116°C/240°F).
  3. 3 Remove from heat. Stir in tahini vigorously until well combined.
  4. 4 Add almonds, candied fruit, and vanilla. Mix thoroughly.
  5. 5 Pour into the lined tin. Press down firmly and smooth the top.
  6. 6 Let cool completely and set firm (several hours). Cut into squares or slices to serve.
