A fragrant, tomato-based fish soup loaded with chunks of fresh Niger River fish, sweet potatoes, and aromatic herbs, simmered to a harmonious depth.

Ingredients

  • 600g firm white fish, cut into chunks
  • 3 large tomatoes, chopped
  • 2 sweet potatoes, peeled and cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 2 scotch bonnet peppers
  • 1 bunch fresh parsley
  • 2 bouillon cubes
  • 1 tbsp tomato paste
  • Salt to taste
  • 5 cups water

Instructions

  1. 1 Heat oil in a large pot, sauté onion and garlic until fragrant.
  2. 2 Add tomato paste and chopped tomatoes. Cook 10 minutes.
  3. 3 Add water, sweet potatoes, bouillon cubes, and scotch bonnet. Boil until potatoes are half-tender, about 10 minutes.
  4. 4 Gently add fish chunks. Simmer on low heat for 15 minutes — do not stir vigorously to keep fish intact.
  5. 5 Add chopped parsley, adjust seasoning, and simmer 5 more minutes.
  6. 6 Serve hot in deep bowls.
