Heat oil in a large pot, sauté onion and garlic until fragrant.

Add tomato paste and chopped tomatoes. Cook 10 minutes.

Add water, sweet potatoes, bouillon cubes, and scotch bonnet. Boil until potatoes are half-tender, about 10 minutes.

Gently add fish chunks. Simmer on low heat for 15 minutes — do not stir vigorously to keep fish intact.

Add chopped parsley, adjust seasoning, and simmer 5 more minutes.

Serve hot in deep bowls.
