Crispy, golden millet flour cakes flavoured with onion and spices, fried until crunchy on the outside and tender within — a traditional Malian snack.

Ingredients

  • 2 cups millet flour
  • 1 onion, finely diced
  • 1 scotch bonnet pepper, minced
  • 1 tsp salt
  • 1 cup water
  • Vegetable oil for frying

Instructions

  1. 1 Mix millet flour with diced onion, minced scotch bonnet, and salt.
  2. 2 Gradually add water and mix into a thick, scoopable batter.
  3. 3 Heat oil in a frying pan over medium heat.
  4. 4 Drop spoonfuls of batter into the oil, flatten slightly with the back of the spoon.
  5. 5 Fry for 3-4 minutes per side until golden and crispy.
  6. 6 Drain on paper towels and serve warm.
