Fonio in Tomato Sauce

Ingredients

  • 2 cups fonio
  • 400g chicken pieces
  • 4 large tomatoes, blended
  • 2 tbsp tomato paste
  • 1 large onion, chopped
  • 2 carrots, diced
  • 1 cup green beans, chopped
  • 2 tbsp vegetable oil
  • 2 scotch bonnet peppers
  • 2 bouillon cubes
  • 1 tsp thyme
  • Salt to taste
  • 3 cups chicken stock

Instructions

  1. 1 Wash fonio in several changes of water until water runs clear. Drain.
  2. 2 Season and brown chicken pieces in oil. Set aside.
  3. 3 Sauté onion in the same pot, add tomato paste and fry 2 minutes.
  4. 4 Add blended tomatoes and cook 15 minutes until reduced.
  5. 5 Add chicken stock, carrots, green beans, thyme, scotch bonnet, and bouillon.
  6. 6 Add washed fonio and browned chicken. Stir, cover, and cook on low heat for 15 minutes.
  7. 7 Fluff with a fork and serve.
