Fonio Porridge

A creamy, comforting fonio porridge cooked with groundnut paste and sweetened with a touch of honey, served as a nourishing breakfast or light meal.

Ingredients

  • 1.5 cups fonio grain
  • 2 tbsp groundnut paste
  • 2 cups water
  • 1 cup milk or plant milk
  • 2 tbsp honey
  • Pinch of salt
  • 1 tsp vanilla extract

Instructions

  1. 1 Wash fonio thoroughly in several changes of water.
  2. 2 Bring 2 cups water to a boil, add fonio and salt. Cook on low heat for 5 minutes, stirring.
  3. 3 Add groundnut paste dissolved in milk. Stir until smooth and creamy.
  4. 4 Cook for 5 more minutes until thickened to porridge consistency.
  5. 5 Stir in honey and vanilla. Serve warm.
