A refreshing, creamy dessert of couscous-like millet granules folded into sweetened yogurt and chilled until perfectly cold and tangy.

Ingredients

  • 1 cup millet couscous (sankalé)
  • 2 cups plain yogurt
  • 3 tbsp sugar or honey
  • 1 tsp vanilla extract
  • 1/4 cup evaporated milk
  • Pinch of nutmeg

Instructions

  1. 1 Steam millet couscous for 15 minutes until cooked through but still granular. Spread on a tray to cool.
  2. 2 In a large bowl, whisk yogurt with sugar, vanilla, evaporated milk, and nutmeg until smooth.
  3. 3 Fold the cooled millet granules into the yogurt mixture until evenly distributed.
  4. 4 Refrigerate for at least 1 hour until well chilled.
  5. 5 Serve cold in small bowls or glasses.
