Ingredients

  • 300g fresh ginger, peeled
  • 2 lemons, juiced
  • 1 cup sugar
  • 1.5L water
  • 1 tsp vanilla extract
  • Pinch of black pepper

Instructions

  1. 1 Blend ginger with 2 cups water until very smooth.
  2. 2 Strain through a fine sieve, pressing to extract all juice.
  3. 3 Add remaining water, lemon juice, sugar, vanilla, and pepper. Stir well.
  4. 4 Chill thoroughly and serve cold.
