Fried Plantain with Chili

Ripe plantain slices deep-fried to golden perfection and served with a fiery scotch bonnet and onion relish, a beloved street food across Mali.

Ingredients

  • 4 ripe plantains
  • Vegetable oil for frying
  • 2 scotch bonnet peppers, sliced
  • 1 onion, sliced into rings
  • 1 tbsp vinegar
  • Salt to taste

Instructions

  1. 1 Peel plantains and slice diagonally into 1cm thick pieces.
  2. 2 Heat oil in a deep pan to 175C.
  3. 3 Fry plantain slices in batches until deep golden, about 3-4 minutes per side.
  4. 4 Mix sliced scotch bonnet, onion rings, vinegar, and salt for the relish.
  5. 5 Serve hot plantains with the chili-onion relish on the side.
