Instructions

    Peel plantains and slice diagonally into 1cm thick pieces.

    Heat oil in a deep pan to 175C.

    Fry plantain slices in batches until deep golden, about 3-4 minutes per side.

    Mix sliced scotch bonnet, onion rings, vinegar, and salt for the relish.

    Serve hot plantains with the chili-onion relish on the side.
