Moist banana bread made with overripe Malawian bananas, lightly spiced with cinnamon and nutmeg.

Ingredients

  • 4 ripe bananas
  • 2 cups flour
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt

Instructions

  1. 1 Mash bananas in a bowl.
  2. 2 Mix in sugar and oil.
  3. 3 Fold in flour, baking soda, and spices.
  4. 4 Pour into greased loaf pan and bake at 175C for 50 minutes.
