The Story Behind Mgaiwa Phala
Mgaiwa phala is a traditional porridge made from unrefined whole-grain maize flour, representing the original way Malawians prepared maize after it was introduced from the Americas in the 16th century. Before industrial milling became widespread, all maize flour retained its bran and germ, making mgaiwa the historical norm rather than the exception. Today it is valued for its superior nutritional content and is promoted by health organizations as a healthier alternative to refined maize porridge.
