Tiny Malawian eggplants stewed in a spiced curry sauce with tomatoes and onions, a flavorful vegetarian relish.

Ingredients

  • 500g kambuzi eggplants, halved
  • 3 tomatoes, chopped
  • 1 onion, diced
  • 2 cloves garlic
  • 1 tsp curry powder
  • 2 tbsp oil
  • Salt

Instructions

  1. 1 Sauté onion and garlic in oil.
  2. 2 Add curry powder, cook 1 minute.
  3. 3 Add tomatoes and simmer 5 minutes.
  4. 4 Add eggplants, cover, cook 20 minutes until soft.
  5. 5 Season and serve.
