Bambara Nut and Beef Stew

A rich, earthy stew of Bambara groundnuts and tender beef chunks cooked slowly in a tomato-onion base until thick and satisfying.

Ingredients

  • 300g Bambara groundnuts (voanjobory), soaked overnight
  • 400g beef chuck, cubed
  • 2 tomatoes, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 thumb ginger, grated
  • 2 tbsp vegetable oil
  • 800ml water
  • Salt and pepper

Instructions

  1. 1 Brown beef cubes in oil. Remove and set aside.
  2. 2 Sauté onion, garlic, and ginger 3 min.
  3. 3 Add tomatoes, cook until soft.
  4. 4 Return beef, add drained voanjobory and water.
  5. 5 Simmer covered for 1 hour until nuts and beef are tender.
  6. 6 Season with salt and pepper. Serve over rice.
