A comforting Malagasy rice and leafy green soup simmered with ginger, garlic, and tender beef, enjoyed as a daily staple across the island.

Ingredients

  • 300g white rice
  • 200g beef, cubed
  • 4 cups mixed greens (mustard greens, watercress)
  • 2 cloves garlic, minced
  • 1 thumb ginger, grated
  • 1 onion, diced
  • 1L water
  • Salt and black pepper
  • 1 tbsp vegetable oil

Instructions

  1. 1 Heat oil, sauté onion, garlic, and ginger until fragrant.
  2. 2 Add beef cubes, brown on all sides for 5 min.
  3. 3 Add water and rice, bring to a boil, then simmer 20 min.
  4. 4 Stir in chopped greens, cook 10 min until rice is soft and soupy.
  5. 5 Season with salt and pepper. Serve hot.
