Ingredients

  • 300g dried white beans, soaked overnight
  • 400ml coconut milk
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 thumb ginger, grated
  • 1 tsp turmeric
  • 2 tomatoes, chopped
  • 1 tbsp vegetable oil
  • Salt and pepper

Instructions

  1. 1 Boil soaked beans until almost tender, about 30 min. Drain.
  2. 2 Sauté onion, garlic, and ginger in oil.
  3. 3 Add turmeric and tomatoes, cook 3 min.
  4. 4 Add beans and coconut milk. Simmer 20 min until creamy.
  5. 5 Season with salt and pepper. Serve over rice.
