Malagasy Fish Stew

Fresh fish simmered in a fragrant broth of tomatoes, onions, ginger, and garlic, brightened with a squeeze of lime juice.

Ingredients

  • 600g firm white fish fillets
  • 3 tomatoes, chopped
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 thumb ginger, grated
  • Juice of 2 limes
  • 2 tbsp vegetable oil
  • 200ml water
  • Salt and pepper
  • Fresh cilantro

Instructions

  1. 1 Season fish with salt, pepper, and half the lime juice.
  2. 2 Sauté onion, garlic, and ginger in oil until fragrant.
  3. 3 Add tomatoes and cook 5 min until soft.
  4. 4 Add water, bring to a simmer. Lay fish fillets on top.
  5. 5 Cover and cook 12-15 min until fish flakes easily.
  6. 6 Squeeze remaining lime, garnish with cilantro. Serve with rice.
