100g fresh red chilies

4 cloves garlic

1 thumb ginger

2 tbsp vegetable oil

1 tsp salt

Juice of 1 lime
Instructions

Remove stems from chilies.

Pound chilies, garlic, ginger, and salt in a mortar until a rough paste forms.

Stir in oil and lime juice.

Transfer to a jar. Let rest 30 min for flavors to meld.

Serve as a table condiment alongside any dish.
