Ingredients

  • 300g rice flour
  • 200ml coconut milk
  • 100g sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • Pinch of salt
  • Vegetable oil for greasing

Instructions

  1. 1 Mix rice flour, sugar, and salt in a bowl.
  2. 2 Whisk in coconut milk, eggs, and vanilla until smooth batter forms.
  3. 3 Let batter rest 15 min.
  4. 4 Grease molds with oil and heat over medium heat.
  5. 5 Pour batter into molds, cook 5-7 min until golden on bottom.
  6. 6 Flip carefully, cook 3 min more. Serve warm.
