Malagasy Beef Skewers

Juicy cubes of zebu beef threaded onto skewers, marinated in garlic and oil, grilled over charcoal, and served with sakay hot sauce.

Ingredients

  • 500g beef (sirloin or rump), cubed
  • 4 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1 tsp black pepper
  • Juice of 1 lime
  • Sakay for serving

Instructions

  1. 1 Cut beef into 2cm cubes.
  2. 2 Mix garlic, oil, salt, pepper, and lime juice. Marinate beef 15 min.
  3. 3 Thread onto skewers.
  4. 4 Grill over hot charcoal 3-4 min per side for medium.
  5. 5 Serve immediately with sakay and lime wedges.
