Ingredients

200g mixed greens (spinach, chard, watercress)

2 tomatoes, chopped

1 onion, diced

2 cloves garlic, minced

100g rice

1L water or vegetable stock

1 tbsp vegetable oil

Salt and pepper
Instructions

Sauté onion and garlic in oil until soft.

Add tomatoes and cook 3 min.

Pour in water, add rice. Simmer 15 min.

Add greens, cook 5 min until wilted and rice is soft.

Season and serve hot.
