Beef and White Bean Stew

Hearty cubes of beef simmered slowly with creamy white beans in a savory tomato and onion broth until meltingly tender.

Ingredients

  • 500g beef chuck, cubed
  • 250g dried white beans, soaked overnight
  • 2 tomatoes, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 thumb ginger, grated
  • 2 tbsp vegetable oil
  • 1L water
  • Salt and black pepper

Instructions

  1. 1 Brown beef cubes in oil in a large pot.
  2. 2 Add onion, garlic, and ginger. Sauté 3 min.
  3. 3 Add tomatoes and cook until softened.
  4. 4 Add drained beans and water. Bring to a boil.
  5. 5 Reduce heat, simmer covered 1 hour until beans and beef are tender.
  6. 6 Season with salt and pepper. Serve over rice.
