Strips of beef slow-fried until deeply caramelized and chewy, seasoned simply with garlic, ginger, and salt — Madagascar's beloved beef jerky.

Ingredients

  • 500g beef (flank or rump), cut into strips
  • 3 cloves garlic, minced
  • 1 thumb ginger, grated
  • 2 tbsp vegetable oil
  • Salt
  • Water as needed

Instructions

  1. 1 Place beef strips in a pot with garlic, ginger, salt, and enough water to just cover.
  2. 2 Bring to a boil, then simmer until all water evaporates.
  3. 3 Add oil and continue frying the beef in its own rendered fat.
  4. 4 Fry on medium-low for 20-30 min, turning occasionally, until dark and crispy.
  5. 5 Serve hot with rice and greens.
