Sweet, chewy coconut confections made from freshly grated coconut, sugar, and vanilla, shaped into small balls or squares.

Ingredients

  • 300g freshly grated coconut
  • 200g sugar
  • 100ml water
  • 1 tsp vanilla extract
  • Pinch of salt
  • Food coloring (optional, pink or green)

Instructions

  1. 1 Combine sugar and water in a saucepan. Cook until syrupy.
  2. 2 Add grated coconut, vanilla, and salt.
  3. 3 Stir constantly over medium heat until mixture thickens and pulls away from the sides.
  4. 4 Add food coloring if desired.
  5. 5 Drop spoonfuls onto parchment paper or shape into small balls.
  6. 6 Let cool completely until firm.
