Tiny river fish dredged in seasoned flour and fried until impossibly crispy, eaten whole as a beloved Luxembourgish snack.

Ingredients

  • 500g small river fish (smelt, whitebait)
  • 150g all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • Vegetable oil for frying
  • Lemon wedges
  • Tartar sauce for serving

Instructions

  1. 1 Clean small fish, pat thoroughly dry with paper towels.
  2. 2 Mix flour with salt, pepper, and paprika in a shallow bowl.
  3. 3 Toss fish in seasoned flour, shaking off excess.
  4. 4 Heat oil in a deep skillet to 180°C (350°F).
  5. 5 Fry fish in batches for 2-3 minutes until golden and crispy. Do not overcrowd.
  6. 6 Drain on paper towels. Serve immediately with lemon wedges and tartar sauce.
