Tender, pillowy dumplings made from fresh curd cheese, lightly boiled and served with sour cream, sugar, and a drizzle of melted butter.

Ingredients

  • 500g fresh curd cheese (varske)
  • 1 egg
  • 3 tbsp sugar
  • 150g all-purpose flour
  • Pinch of salt
  • 50g butter, melted
  • Sour cream for serving
  • Extra sugar for sprinkling

  1. 1 Mash curd cheese until smooth. Mix in egg, sugar, flour, and salt to form a soft, slightly sticky dough.
  2. 2 Bring a large pot of lightly salted water to a gentle boil.
  3. 3 Shape dough into small round dumplings using floured hands, about 3cm each.
  4. 4 Drop dumplings into boiling water in batches. Cook until they float, about 3-4 min.
  5. 5 Remove with a slotted spoon. Drizzle with melted butter, top with sour cream and sugar.
