Thin, delicate crepes filled with sweet curd cheese, rolled and pan-fried until golden, served with sour cream and berry sauce.

Ingredients

  • 200g all-purpose flour
  • 2 eggs
  • 400ml milk
  • 1 tbsp sugar
  • Pinch of salt
  • Butter for frying
  • 400g fresh curd cheese
  • 3 tbsp sugar for filling
  • 1 egg yolk
  • 1 tsp vanilla extract
  • Berry sauce or jam for serving
  • Sour cream for serving

Instructions

  1. 1 Whisk flour, eggs, milk, sugar, and salt into a thin, smooth batter. Rest 15 min.
  2. 2 Cook thin crepes in a buttered pan over medium heat, about 1 min per side. Stack and keep warm.
  3. 3 Mix curd cheese with sugar, egg yolk, and vanilla for the filling.
  4. 4 Place 2 tbsp filling on each crepe, fold in sides, and roll into a neat package.
  5. 5 Pan-fry filled crepes in butter until golden on both sides, about 2 min per side.
  6. 6 Serve warm with sour cream and berry sauce.
