Mushrooms in Cream Sauce

Wild forest mushrooms sauteed with onions and simmered in a luscious sour cream sauce, served over boiled potatoes.

Ingredients

  • 500g mixed wild mushrooms (boletus, chanterelles), cleaned and sliced
  • 1 large onion, diced
  • 2 tbsp butter
  • 200ml sour cream
  • 100ml heavy cream
  • 2 cloves garlic, minced
  • Fresh dill and parsley, chopped
  • Salt and pepper
  • Boiled potatoes for serving

Instructions

  1. 1 Melt butter in a large skillet over medium-high heat. Add mushrooms and cook without stirring for 3-4 min to develop color.
  2. 2 Add onion and garlic, saute 5 min until softened.
  3. 3 Reduce heat, add sour cream and heavy cream. Stir gently and simmer 10 min until sauce thickens.
  4. 4 Season with salt and pepper. Stir in fresh herbs.
  5. 5 Serve immediately over hot boiled potatoes.
