A unique, slightly sweet bread made from overripe bananas and rice flour, baked to a moist, dense texture with a golden crust.

Ingredients

  • 2 cups rice flour
  • 4 very ripe bananas, mashed
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1/2 cup warm water

Instructions

  1. 1 Mash bananas until very smooth. Mix with oil, eggs, sugar, and vanilla.
  2. 2 Combine rice flour, baking soda, nutmeg, cinnamon, and salt.
  3. 3 Add dry ingredients to wet. Mix well. Add warm water to thin slightly.
  4. 4 Pour into a greased baking pan.
  5. 5 Bake at 175C for 40-45 minutes until golden and firm.
  6. 6 Cool before cutting into squares.
