Ingredients

  • 4 ripe plantains, peeled and sliced
  • 1 cup roasted groundnuts, ground to paste
  • 500g chicken, cut into pieces
  • 2 large onions, chopped
  • 3 large tomatoes, blended
  • 2 scotch bonnet peppers
  • 2 bouillon cubes
  • 1 tbsp tomato paste
  • Salt to taste
  • 4 cups water

Instructions

  1. 1 Season chicken with salt and boil until tender, about 30 minutes.
  2. 2 Add blended tomatoes, onions, tomato paste, and peppers. Cook 15 minutes.
  3. 3 Add plantain slices and cook until soft, about 10 minutes.
  4. 4 Stir in groundnut paste. Simmer on low heat 10 minutes, stirring to prevent sticking.
  5. 5 Season with bouillon and salt. Serve with rice or fufu.
