A fiery, aromatic broth loaded with goat meat, country spices, and scotch bonnet peppers — Liberia's cure-all and celebration soup.

Ingredients

  • 1 kg goat meat, cut into chunks
  • 4 scotch bonnet peppers
  • 2 large onions, chopped
  • 4 cloves garlic, minced
  • 2 inches fresh ginger, grated
  • 1 tbsp country spice blend
  • 2 bouillon cubes
  • 2 limes, juiced
  • Salt to taste
  • 6 cups water

Instructions

  1. 1 Season goat meat with salt, garlic, ginger, and bouillon. Boil until tender, about 40 minutes.
  2. 2 Blend peppers and onions into a paste. Add to the pot.
  3. 3 Add country spice blend and lime juice. Simmer 15 minutes.
  4. 4 The broth should be clear and intensely peppery.
  5. 5 Serve hot in deep bowls, drink the broth and eat the meat.
