A naturally fermented, mildly alcoholic milky-white drink tapped from palm trees, with a sweet-sour tang and gentle fizz — Liberia's ancestral beverage.

Ingredients

  • Fresh sap tapped from raffia or oil palm tree
  • No additional ingredients needed — natural fermentation

Instructions

  1. 1 Select a mature palm tree. Climb and make a careful incision near the crown.
  2. 2 Attach a collection gourd or container beneath the cut.
  3. 3 Collect the flowing sap over 4-8 hours.
  4. 4 The sap naturally ferments as it collects, becoming mildly alcoholic.
  5. 5 Strain and serve fresh for a sweeter taste, or let sit for a stronger, more sour brew.
