A fiery, refreshing homemade drink of fresh ginger brewed with sugar, lime, and cloves — Liberia's most popular non-alcoholic beverage.
Ingredients

500g fresh ginger, peeled and chopped

2 limes, juiced

1.5 cups sugar

8 whole cloves

1 stick cinnamon

1 tsp vanilla extract

2 litres water

Ice for serving
Instructions

Blend ginger with 2 cups water until smooth.

Strain through a fine sieve into a large pot, pressing to extract all juice.

Add remaining water, sugar, cloves, and cinnamon. Bring to a boil.

Simmer 10 minutes. Remove from heat and add lime juice and vanilla.

Strain again, cool, and refrigerate until cold. Serve over ice.
