Liberian Jollof Rice

A richly spiced one-pot rice dish cooked in a smoky tomato and pepper sauce with chicken, a staple at every Liberian celebration and gathering.

Ingredients

  • 3 cups long-grain rice
  • 6 large tomatoes, blended
  • 1 whole chicken, cut into pieces
  • 2 large onions, chopped
  • 3 tbsp tomato paste
  • 2 scotch bonnet peppers
  • 1 cup vegetable oil
  • 2 bouillon cubes
  • 1 tsp thyme
  • 1 tsp curry powder
  • Salt to taste

Instructions

  1. 1 Season chicken with salt and spices, fry until golden, set aside.
  2. 2 In same oil, sauté onions, add blended tomatoes, tomato paste, and peppers. Cook 20 minutes.
  3. 3 Add rice, chicken, bouillon, thyme, curry, and enough water to cover. Stir once.
  4. 4 Cover tightly and cook on low heat 30 minutes until rice is tender and liquid absorbed.
  5. 5 Fluff with fork, serve hot.
