Liberian Gravy

Tomato-Based Meat Stew

A thick, rich tomato and onion gravy with tender beef, the everyday sauce that Liberians pour over rice at nearly every meal.

Ingredients

  • 500g beef, cut into pieces
  • 6 large tomatoes, blended
  • 2 large onions, chopped
  • 3 tbsp tomato paste
  • 1/2 cup vegetable oil
  • 2 scotch bonnet peppers
  • 2 bouillon cubes
  • 1 tsp thyme
  • Salt to taste
  • 2 cups water

Instructions

  1. 1 Season beef with salt and thyme. Brown in oil, set aside.
  2. 2 In same pot, sauté onions. Add blended tomatoes and tomato paste.
  3. 3 Cook tomato base 20 minutes until reduced and oil floats on top.
  4. 4 Return beef, add water, peppers, and bouillon. Simmer 15 minutes.
  5. 5 Gravy should be thick and glossy. Serve over rice.
