A robust, meaty soup simmered with whole goat pieces, root vegetables, and aromatic spices until the broth is deeply flavourful and the meat falls off the bone.

Ingredients

  • 1 kg goat meat on the bone, cut into pieces
  • 3 large potatoes, cubed
  • 2 carrots, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 inches ginger, grated
  • 3 scotch bonnet peppers
  • 2 bouillon cubes
  • 1 tsp thyme
  • Salt to taste
  • 6 cups water

Instructions

  1. 1 Season goat meat with salt, garlic, ginger, and thyme. Boil until tender, about 1 hour.
  2. 2 Add potatoes, carrots, onion, peppers, and bouillon.
  3. 3 Simmer 20 minutes until vegetables are tender.
  4. 4 Adjust seasoning. The broth should be rich and full-bodied.
  5. 5 Serve in deep bowls with bread or rice.
