Sweet Potato Leaf Stew

A thick, nutritious stew made from tender sweet potato leaves cooked with palm oil, smoked fish, and peppers — an everyday Liberian green stew.

Ingredients

  • 2 lbs sweet potato leaves, washed and chopped
  • 200g smoked fish, deboned
  • 1 cup palm oil
  • 2 large onions, chopped
  • 2 scotch bonnet peppers
  • 1 cup ground crayfish
  • 2 bouillon cubes
  • Salt to taste
  • 2 cups water

Instructions

  1. 1 Heat palm oil in a pot. Sauté onions until soft.
  2. 2 Add smoked fish, crayfish, peppers, and bouillon. Cook 5 minutes.
  3. 3 Add water and bring to a simmer.
  4. 4 Add chopped potato leaves. Stir well.
  5. 5 Cover and cook 20 minutes until leaves are tender and sauce is thick.
  6. 6 Season with salt and serve with rice or fufu.
