Beans and Plantain

Stewed Beans with Fried Plantain

A satisfying combination of slow-cooked beans in a rich palm oil and pepper sauce served alongside sweet fried ripe plantain.

Ingredients

  • 2 cups black-eyed beans, soaked overnight
  • 3 tbsp palm oil
  • 2 large onions, chopped
  • 3 tomatoes, chopped
  • 2 scotch bonnet peppers
  • 1 bouillon cube
  • 4 ripe plantains
  • Vegetable oil for frying
  • Salt to taste

Instructions

  1. 1 Boil soaked beans until tender, about 45 minutes.
  2. 2 Heat palm oil, sauté onions. Add tomatoes and peppers. Cook 10 minutes.
  3. 3 Add cooked beans, bouillon, and salt. Simmer 10 minutes.
  4. 4 Slice plantains diagonally. Fry in oil until golden on both sides.
  5. 5 Serve beans stew alongside fried plantain.
