Latvian Potato Salad

A creamy, hearty Latvian salad of diced potatoes, carrots, eggs, pickles, and smoked chicken bound with sour cream and mayonnaise.

Ingredients

  • 6 medium potatoes, boiled and cooled
  • 3 carrots, boiled and cooled
  • 4 hard-boiled eggs
  • 200g smoked chicken breast, diced
  • 4 pickled cucumbers, diced
  • 1 small onion, finely diced
  • 150g mayonnaise
  • 100g sour cream
  • 2 tbsp pickle brine
  • Salt and white pepper
  • Fresh dill for garnish

Instructions

  1. 1 Dice boiled potatoes, carrots, and eggs into 1cm cubes. Place in a large bowl.
  2. 2 Add diced smoked chicken, pickled cucumbers, and onion.
  3. 3 Mix mayonnaise, sour cream, and pickle brine. Season with salt and white pepper.
  4. 4 Pour dressing over the salad and fold gently to combine without mashing.
  5. 5 Cover and refrigerate at least 2 hours for flavors to meld.
  6. 6 Serve cold, garnished with fresh dill.
