Latvian Crescent Rolls

Small crescent-shaped yeasted rolls stuffed with a savory filling of caramelized onions and smoked chicken, golden and aromatic.

Ingredients

  • 500g all-purpose flour
  • 250ml warm milk
  • 7g instant yeast
  • 60g butter, softened
  • 1 egg
  • 1 tsp sugar
  • 1 tsp salt
  • 300g smoked chicken, finely diced
  • 2 large onions, finely diced
  • 2 tbsp butter for filling
  • 1 egg yolk for glazing

Instructions

  1. 1 Dissolve yeast and sugar in warm milk. Mix flour, salt, softened butter, and egg. Add milk mixture, knead 10 min into smooth dough. Rise 1 hour.
  2. 2 Sauté onions in butter until deep golden, about 15 min. Mix with diced smoked chicken. Season and cool.
  3. 3 Roll dough into circles about 8cm across. Place a spoonful of filling on each.
  4. 4 Fold dough over filling and shape into crescents, pinching edges to seal tightly.
  5. 5 Place on lined baking sheets, cover and rise 20 min. Brush with egg yolk.
  6. 6 Bake at 200°C (390°F) for 15-18 min until deep golden brown.
