Cottage Cheese Bread

A moist, tender quick bread made with fresh cottage cheese, subtly sweet and flavored with vanilla and lemon zest.

Ingredients

  • 500g cottage cheese (full fat)
  • 3 eggs
  • 150g sugar
  • 250g all-purpose flour
  • 1 tsp baking powder
  • 80g butter, melted
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. 1 Beat eggs with sugar until pale and fluffy, about 3 min.
  2. 2 Add cottage cheese and melted butter, mix until combined.
  3. 3 Fold in flour, baking powder, vanilla, lemon zest, and salt until just mixed.
  4. 4 Pour batter into a greased and floured loaf pan.
  5. 5 Bake at 175°C (345°F) for 45-50 min until a skewer comes out clean.
  6. 6 Cool in pan 10 min, then unmold and dust with powdered sugar when cool.
