Ingredients
200g glass noodles
200g shrimp, peeled
150g ground chicken
1 red onion, sliced
2 tomatoes, sliced
Celery stalks, sliced
Fresh mint and cilantro
5 Thai chilies, sliced
3 tablespoons lime juice
2 tablespoons fish sauce
1 tablespoon sugar
Instructions
1Soak glass noodles in hot water until tender, then drain and cut into manageable lengths.
2Blanch shrimp in boiling water until pink, then remove and set aside.
3Cook ground chicken in a small amount of water until done, breaking into fine pieces.
4Combine noodles, shrimp, chicken, red onion, tomatoes, and celery in a large bowl.
5Whisk together lime juice, fish sauce, sugar, and sliced chilies to make the dressing.
6Toss everything with the dressing, garnish with mint and cilantro, and serve immediately.
