Round flatbread baked on the inner walls of a clay tandoor oven, with a decorated center and crispy edges. An essential accompaniment to every Kyrgyz meal.

Ingredients

  • 500g flour
  • 300ml warm water
  • 1 teaspoon salt
  • 1 teaspoon dry yeast
  • 1 tablespoon sugar
  • Sesame or nigella seeds
  • 1 egg for glaze

Instructions

  1. 1 Dissolve yeast and sugar in warm water.
  2. 2 Mix flour and salt, add yeast mixture and knead into smooth dough.
  3. 3 Rest for 1 hour until doubled.
  4. 4 Shape into round discs, press center with bread stamp or fork.
  5. 5 Brush with egg wash and sprinkle seeds.
  6. 6 Bake in preheated oven at 250°C for 15-20 minutes.
  7. 7 Serve warm.
