A Dungan-influenced dish of steamed rice topped with a savory stir-fried topping of lamb, vegetables, and spicy sauce. Kyrgyzstan's beloved Chinese-Central Asian fusion.

Ingredients

  • 400g rice
  • 400g lamb, sliced thin
  • 2 onions, sliced
  • 2 bell peppers, sliced
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste
  • 2 tablespoons oil
  • Salt and pepper

Instructions

  1. 1 Cook rice and keep warm.
  2. 2 Heat oil in a wok over high heat.
  3. 3 Stir-fry lamb until browned, remove.
  4. 4 Stir-fry onions, peppers, and garlic until fragrant.
  5. 5 Add tomatoes and cook until soft.
  6. 6 Return lamb, add soy sauce and chili paste.
  7. 7 Toss and cook 2 more minutes.
  8. 8 Serve stir-fry over steamed rice.
