Fried Bread Diamonds

Small diamond-shaped pieces of dough deep-fried until golden and puffy. Served at every Kyrgyz celebration as a symbol of hospitality and abundance.

Ingredients

  • 500g flour
  • 200ml warm milk
  • 50g butter, melted
  • 1 egg
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon dry yeast
  • Oil for deep frying

Instructions

  1. 1 Dissolve yeast in warm milk with sugar.
  2. 2 Mix flour, salt, egg, and melted butter.
  3. 3 Add milk mixture and knead into soft dough.
  4. 4 Rest dough 30 minutes until doubled.
  5. 5 Roll out to 1cm thickness, cut into diamond shapes.
  6. 6 Deep fry in batches until golden brown on both sides.
  7. 7 Drain on paper and pile onto a serving platter.

Did You Know?

A Kyrgyz celebration without boorsok is unthinkable. Mountains of these golden puffs are piled high on the dastorkon (tablecloth), and guests are expected to eat them throughout the event.
