Ingredients

  • 8 eggs
  • 2 roasted peppers, diced
  • 2 tomatoes, diced
  • 100g white cheese, crumbled
  • 3 tbsp butter
  • Salt and pepper to taste

Instructions

  1. 1 Melt butter in a large skillet over medium heat.
  2. 2 Add diced roasted peppers and tomatoes, cooking for three minutes until softened.
  3. 3 Beat the eggs lightly with salt and pepper, then pour into the skillet.
