A hearty Kikuyu dish pairing grilled or stewed beef with irio, a vibrant green mash of potatoes, peas, and corn, representing the agricultural heritage of central Kenya.

Ingredients

  • 500g beef steak or stewing beef
  • 4 large potatoes, peeled and cubed
  • 2 cups green peas
  • 1 cup corn kernels
  • 1 bunch spinach or pumpkin leaves, chopped
  • 2 tbsp butter
  • 1 onion, sliced
  • 2 tomatoes, diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil

Instructions

  1. 1 Boil the potatoes, peas, and corn together in salted water for about 20 minutes until the potatoes are completely tender and mashable.
  2. 2 Drain most of the water, add the chopped greens, and mash everything together with butter until you get a chunky green mash with visible peas and corn.
  3. 3 Season the beef with salt and pepper, then pan-fry or grill until done to your liking, or stew with onions and tomatoes for a saucier version.
  4. 4 Serve a generous mound of the green irio alongside the cooked beef, with the meat juices or gravy drizzled over the top.

Irio was the warrior food of the Kikuyu people, believed to give strength before battle, and the green color from the peas symbolizes the fertile farmlands of central Kenya.
