A traditional dish from Kenya's Nyeri region, a green-tinted mash of potatoes, green peas, corn, pumpkin leaves, and beans, richer and more complex than standard irio.
Ingredients
6 large potatoes, peeled and cubed
1 cup green peas
1 cup cooked kidney beans
1 cup corn kernels
2 cups pumpkin leaves, chopped
3 tbsp butter
1/2 cup milk
1 tsp salt
Instructions
1Boil the potatoes in salted water for about 15 minutes, then add the green peas and corn kernels and continue cooking for another 10 minutes.
2Add the chopped pumpkin leaves and cooked kidney beans to the pot and cook for 5 more minutes until the leaves are wilted and tender.
3Drain excess water, add butter and milk, and mash everything together vigorously with a wooden spoon, leaving some texture with visible beans and corn.
4Season with salt, shape into a mound on a serving plate, and serve hot alongside grilled meat, stew, or as a satisfying main dish on its own.
